Calabrian/S.Italian Easter Sweets - Mini Cuzzupe (e64)

Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), shows us how to make some super cute Easter sweets. Although Easter breads are made throughout Italy, each region has its own approach. Calabria is one of Italy's 20 states, found at the bottom of the 'boot', and is Nonna's home state. In this video, Nonna demonstrates a variation on what she showed us last year in episode 8, where she made CUZZUPE (representing a crown) and CUCULI (a doll-shaped pastry).To make Nonna's Easter Sweets, you will need the following ingredients:

- a total of 19 eggs
- 12 painted eggs, or plain if you prefer (it makes about a dozen pastries)
- 6 eggs for the dough and
- an additional egg for the wash
- 5 cups of flour and a little more for dusting your surface
- 1 cup of sugar (though you can put more if you prefer sweetness)
- 1/2 cup (4 oz) of olive oil
- 1/2 cup (4 oz) of milk
- zest of a lemon
- 3 teaspoons of baking powder
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda
- sprinkles
- food colouring

In this episode, Nonna opts for the Kitchen-Aid, but in episode 8, she makes the dough by hand, using the traditional 'nest'. You might enjoy watching that as well.

She hand blends all the ingredients then adds all 5 cups of flour and places the dough hook on the mixer, at speed-2 for a couple of minutes. She then transfers the dough to a dusted surface and briefly works the dough into a log shape. She then cuts a portion off and rolls 'ropes' to about 18 inches in length, cutting that then in half, for 2 9 inch ropes. She twists the two together, forms the dough into a circle, places an egg in its centre and then uses some egg wash to connect both ends. The eggs are washed beforehand, and uncooked. She adds egg wash and sprinkles to each one and places it on a sprayed cooking sheet. She bakes them about 30 minutes in a preheated 325F oven.
