Double Lemon Cookies (e73)
Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), uses her free-time in another Ontario Covid lockdown to teach us that when we are dished sour lemons in life, we can make sweet lemon cookies. There is a lot of wisdom in that Nonna of ours!
To make her super lemony cookies (6 dozen), here is what you need:
- 6 cups of flour
- 5 eggs
- 2 cups of sugar
- 6 oz of olive oil
- 2 teaspoons of baking "power"
- the zest from 3 lemons
- 1/3 cup lemon juice
The glaze:
- 3 cups of icing sugar
- the juice from two lemons (about 4 oz)
- optional, yellow-colouring, Nonna used some natural colouring
Nonna makes her traditional 'nest' but you can put everything into a mixer if you wish. When the dough comes together, she begins kneading it until the consistency is smooth and shiny. She cuts her dough into two pieces, for easier handling and continues to knead a few more rounds.
She then rolls the dough out on a dusted board, to a thickness of about 1/4 inch. Using a cookie cuter, she begins cutting the cookies. In all, her recipe makes 6 dozen - feel free to cut the recipe in half if you don't want so many cookies. Nonna loves to give them away and also freezes them for future use, hence the bigger 'Nonna-style' batch. Scraps from cuttings easily come together to make the dough, so make as many as you can from the remaining dough bits.
Place the cookies on a cookie tray lined with parchment paper. Bake at 350F for about 15 minutes - the base should appear golden brown.
Allow the cookies to cool, and then glaze. You simply stir together 3 cups of icing sugar with the 4 oz of lemon juice. Nonna added in a few drops of natural yellow colouring, but that is of course, optional.
She then brushes on the glaze and allows it to set.
