How to make Bunuelos de Bacalao~with Chef Frank
Bacalao or Baccala is salted dried salt cod. I remember my grandmother making this when I was a kid. These bunuelos are something I have been making in one form or another throughout my career. They are easy to prepare and quick to cook. Salt cod may not be for everyone but, I encourage you to give it a try.
Makes about 30 bunuelos
2#/907g salt cod
2 cups/256g all purpose flour
1tbsp/14 g baking powder
2 scallions, chopped
1/2 bu flat leaf parsley, chopped
2 cloves garlic, chopped
1/4 tsp/1 g chili flakes
1/2-3/4 cup118 ml-177ml soaking liquid
2 eggs
