How to Make Vietnamese Summer Rolls~with Chef Frank
I have been going to the same Vietnamese restaurant for about 20 years. This is my version of the summer rolls they make. They are a great appetizer or light snack.
Makes about 12 rolls
20-25 large round rice paper
1/2 package rice sticks
1/2 head lettuce, shredded
5-6 scallions, cut into large sticks
30-40 mint leaves
1#/454g shrimp peeled and deveined
Peanut sauce
1/4-1/2 cup/60 ml-119 ml soy sauce
1/4 cup/60 ml hoisin sauce
1/2 cup/119 ml peanut butter
1 clove garlic, chopped
1 tbsp/14 ml chili garlic sauce
1/2-3/4 cup/119 ml-177 ml water
juice of 1-2 limes
1 tbsp/14 g chopped salted peanuts
