pizza dough
makes 2 balls

Pre ferment or biga

150 g all purpose flour
150 g water, room temperature
1 g yeast

Dough
all of the preferment
300 g 00 flour or bread flour
130 g water, room temperature
3 g instant yeast
15 g olive oil
13 g kosher salt

28 oz can peeled ground tomatoes
1 clove garlic
1/4 cup extra virgin olive oil
Large pinch of salt

Add all to a bowl and purée with a blender or stick blender
