How to make Fried Chicken~With Chef Frank
People are passionate about fried chicken and I realize this might not be everyones idea of how fried chicken is made. I have been making it this way for years and it is delicious. This method makes a super juicy interior with a crunchy exterior. Hope you enjoy.
serves 4-6
3-4# boneless chicken thighs with the skin on cut in 3-4 ounce portions
4 cups buttermilk
2 cloves garlic, chopped
hot sauce to taste
salt
black pepper
5- 6cups all purpose flour
oil for frying
Mix buttermilk, garlic, salt, hot sauce, black pepper in a bowl or large measuring cup. Taste for seasoning, then pour over the chicken. Let marinate in the fridge for at least 6 hours or overnight.
put flour in a large bowl, season with salt & black pepper. Remove the chicken one piece at a time and let drain a little then toss in the flour. Save the leftover flour. Lay the floured chicken on a rack and refrigerate for about 1/2 hour. Heat your oil in a large skillet to about 375 degrees F. toss the chicken pieces back into the reserved flour and coat well. Fry chicken pieces 3-4 at a time for 8-10 minutes (note:cooking time may vary if you have smaller or larger thighs or have a larger pot of oil). Remove and drain on paper towels. Serve.
