Easter Bread

Easter Bread is a traditional recipe from my mother-in-law’s Italian family. This bread is sweet, buttery, and topped with a vanilla glaze—such a treat for your Easter table! My mother-in-law shared with me that some of her family members like to use leftover ham and this bread to make sandwiches! I hope you love it as much as we do!

Easter Bread
3 Tbsp. yeast
3 Tbsp. sugar
¼ c. warm water
4 eggs
½ lemon, zest & juice
1 tsp. vanilla extract
1 ½ sticks unsalted butter, melted
1 c. sugar
¾ c. milk
6-7 cups all-purpose flour (King Arthur brand, recommended)
2 cups powdered sugar
1 tsp. all purpose flour
1 ½ tsp. vanilla extract
½ stick unsalted butter, melted
1-2 Tbsp. water
1 egg, beaten
sprinkles

Whisk the 3 Tbsp. yeast, 3 Tbsp. sugar, and ¼ c. warm water together and set aside for 5 minutes until foamy.
In the bowl of a stand mixer, whisk the 4 eggs, ½ lemon zest and juice, 1 tsp. vanilla, 1 ½ sticks of melted butter, 1 c. sugar, and ¾ c. milk. Add the yeast mixture and whisk to combine. Add 6 cups of all-purpose flour to start. Secure the bowl to the stand mixer with the dough hook attachment. Start mixing on low until the flour starts to work into the dough. Increase the speed to medium and combine the ingredients until they form a ball, adding more flour if necessary to achieve a play-doh-like texture and have a soft but not sticky feel. (On this day we used 6 ½ c. total of all purpose flour.) Remove dough from the bowl and spray the inside of the mixing bowl with baking spray. Place the dough back inside and cover with plastic wrap and/or a tea towel. Allow to rise in a warm place for at least an hour. The dough should double in size.
Preheat the oven to 350 degrees. Punch down the risen dough and divide (if necessary) into your baking pans. (On this day we used 2 small loaf pans and a 9 inch cake pan). Spray your baking pan(s) with baking spray and form the dough into logs or twist/braid and pinch together to form a circular shape. Place the dough in the pans and allow to rise again for about 20 minutes.
To make the glaze, whisk the powdered sugar, 1 tsp. flour, 1 ½ tsp. vanilla, ½ stick melted butter and 1 Tbsp. water together until smooth. Add more water if necessary.
Brush the top of each loaf with the 1 beaten egg. Bake at 350 degrees for about 30 minutes then reduce the temperature to 325 and finish baking for about 10 minutes. The baking time will vary depending on the size of loaf pan you use. Check the loaves periodically and reduce the heat sooner, if necessary, to prevent the tops from getting too dark. The loaves will rise and be golden brown when finished—you can also test them with a toothpick to make sure they are baked on the inside.
Remove the loaves from the oven and allow to cool slightly. While still warm, spread the glaze all over the tops and decorate with sprinkles. ENJOY!
