Penne alla Vodka | Valentine's Day Dinner

This recipe for Penne alla Vodka is fast, easy, and tastes like it's from a restaurant!

Penne alla Vodka
(inspired by https://www.halfbakedharvest.com Spicy Pesto Pasta alla Vodka)
2 Tbsp. olive oil
1 medium onion, finely diced
4 garlic cloves, minced
1 tsp. dried Italian seasoning
1-6 oz. can tomato paste
1/4 c. vodka
1/2 cup basil pesto
salt & pepper
1 c. half & half or heavy cream
1 lb. penne pasta
2 Tbsp. salted butter
parmesan cheese and parsley or basil (dried or fresh) for garnish

In a large, high sided non-stick skillet, heat 2 Tbsp. olive oil over medium low heat. Sauce the onion, garlic, and Italian seasoning until the onion has softened slightly (about 3-5 minutes). Turn the heat down to low and add the tomato paste. Stir and cook for a couple of minutes. Stir in the vodka and cook for a minute. Add the pesto and half & half, season with salt & pepper, stir to combine and simmer over low heat.
Meanwhile, boil the pasta in a large pot of salted water until the pasta is al dente (refer to package directions). Reserve 1 cup of the pasta water before draining the pasta. Add the pasta to the sauce along with about half of the water. Stir to coat the pasta in the sauce and add more water if needed to thin out the sauce. Add the butter and stir in until melted. Sprinkle with parmesan cheese and dried parsley for garnish. ENJOY!
