Pumpkin Chocolate Chip Cake Squares
Pumpkin Chocolate Chip Cake Squares are my FAVORITE fall dessert to bake! I've been making these for almost 15 years for all of my friends and family. Everyone loves them, and I hope you do too! *This video is part of an open collaboration with Moss Family TV (channel linked below) for #FallFoodFriday!*
Pumpkin Chocolate Chip Cake Squares
recipe from Everyday Food magazine
2 cups flour
1 Tbsp. pumpkin pie spice
1 tsp. baking soda
¾ tsp. salt
1 ¼ cups sugar
2 sticks unsalted butter, softened to room temperature
1 c. pumpkin puree
1 egg
2 tsp. vanilla extract
1 bag (12 oz.) mini semi-sweet chocolate chips
Preheat oven to 350 degrees. Whisk the flour, pumpkin pie spice, baking soda and salt together in a medium bowl. Using an electric hand mixer, cream the butter and sugar together in a large mixing bowl. Add the pumpkin puree, egg, and vanilla and mix together (might have a slightly curdled looking texture, but that’s ok!). Using a rubber spatula, mix in the chocolate chips by hand. Prepare a 9x 13in glass baking dish by lining it with foil and spraying with cooking spray to ensure the cake squares don’t stick. Use the rubber spatula to evenly spread the mixture into the pan. Bake at 350 degrees for about 35 minutes (but check for doneness around the 30 minute mark—inserted toothpick should come out pretty clean). Cool and enjoy!
