“Christmas Dinner” Turkey Burgers
1 package ground turkey (mine was a little over 1 lb., so I could make 6 patties)
1 Tbsp. breadcrumbs
1 egg
½ tsp. garlic powder
½ tsp. dried rosemary
salt & pepper
2 Tbsp. olive oil
1 wheel Brie cheese, sliced thinly (you can remove the rind if you want)
1 can jellied cranberry sauce, sliced into ¼ inch rounds
¾ tsp. poultry seasoning
¾ tsp. onion powder
4 Tbsp. unsalted butter, softened
potato hamburger buns
mixed greens for serving

In a large mixing bowl add the ground turkey, breadcrumbs, egg, garlic powder, and rosemary—crush the dried rosemary between your fingers before adding to break it down into small bits and to release the flavor. Season with a pinch of salt & pepper. Preheat a large, nonstick skillet over medium heat. Add about 2 Tbsp. olive oil. Combine the turkey mixture with your hands and form into 6 patties. If the mixture is sticking too much to your fingers and palms, you can dampen your hands with water and that will help! Place the patties into the preheated skillet and cook until browned on the first side. Flip the patties, press them down slightly, and cook until done (turkey burgers should always be served well done for safety—internal temperature should be at least 165*.) Place a couple slices of brie onto the burgers, cover, and allow to melt over low heat.
While the burgers cook, prep the hamburger buns. In a small bowl, mix together the softened butter, poultry seasoning, onion powder, and a pinch of salt. Taste and add more salt if desired. Spread the butter mixture evenly on the insides of 6 buns. Place the buns onto a sheet pan and broil on HI for a minute or two until golden—watch closely so they don’t burn! To assemble the burgers, place on a patty on a bottom bun. Top with a slice of cranberry sauce, a handful of mixed greens, and the bun lid. ENJOY!

Eggnog No Churn Ice Cream
1 pint heavy cream
1 tsp. vanilla extract
1 tsp. rum extract
½ tsp. cinnamon
½ tsp. nutmeg
1 can (14 oz.) sweetened condensed milk
whipped cream and nutmeg for garnish (optional)

In a large mixing bowl, add the heavy cream, vanilla, rum extract, cinnamon and nutmeg. Whip with a hand mixer until stiff. Use a rubber spatula to gently fold in the sweetened condensed milk until fully combined. Pour the mixture into a 9x5 loaf pan. Cover the surface directly with plastic wrap and freeze for several hours. Scoop and serve with whipped cream and a sprinkle of nutmeg, if desired. ENJOY!
