What's for Dinner? | Shrimp Tacos & Bean Dip
Today I'm sharing an EASY and flavorful recipe for shrimp tacos along with the best bean dip recipe I've tried (courtesy of @healthyhappyhome on Instagram)!
Shrimp Tacos
1.5 lbs. frozen medium shrimp, thawed
3 Tbsp. olive oil
juice of 2 limes
2 cloves garlic, minced
1/4 c. mayo
1/4 c. plain yogurt
salt & pepper
chili powder, garlic powder, cumin
sugar
1/4 c. cilantro, finely chopped
1/4 c. green onions, finely chopped
1/2 bag coleslaw mix
2 mangos, diced
flour tortillas
In a medium sized bowl combine 1/4 c. mayo, 1/4 c. plain yogurt, juice of 1 lime, and a pinch of salt, pepper, chili powder, garlic powder, cumin, and sugar. Stir to combine and adjust seasonings as desired. Stir in the coleslaw mix, green onions, and cilantro. Cover and refrigerate until ready to eat.
In a large mixing bowl toss the defrosted shrimp with 3 tablespoons of olive oil, the juice of 1 lime, the minced garlic, and a pinch of salt, pepper, chili powder, and cumin. Preheat a large nonstick skillet over medium high heat. Add the shrimp and cook for 1-2 minutes on each side or until the shrimp are pink and opaque. To assemble the tacos, warm up the flour tortillas. Fill with shrimp and top with coleslaw and fresh mango. ENJOY!
Bean Dip
2 cans fat free refried beans
8 oz. cream cheese, room temperature
3 Tbsp. taco seasoning
4 oz, diced green chiles
2 1/2 c. shredded Mexican blend cheese
Preheat oven to 350*. In a large mixing bowl, add the beans, cream cheese, taco seasoning, green chiles, and 2 cups of shredded cheese. Stir together with a spoon or electric hand mixer until combined. Spread the bean dip into a greased, 8x8in. glass baking dish. Top with 1/2 c. shredded cheese. Bake at 350* for about 25 minutes or until hot and bubbling.
