Chicken Satay Sliders
Today's recipe is an easy and flavorful change-up to your classic burger--Chicken Satay Sliders! These ground chicken (or turkey) patties are topped with pickled veggies, fresh herbs, and a creamy peanut sauce for a healthy, tasty, and simple dinner option that you are going to love!
CHICKEN SATAY SLIDERS
Burgers:
1.5 lbs. ground chicken or turkey
1 tsp. dried ginger
2 Tbsp. plain breadcrumbs
2 cloves minced garlic
3 Tbsp. soy sauce
4 sliced scallions
salt & pepper
Toppings:
1 carrot
1 cucumber
1 Tbsp. rice wine vinegar
pinch of sugar
pinch of salt
1/4 c. cilantro, chopped
1/4 c. basil, chopped
Sauce:
1/2 c. crunchy peanut butter
3 Tbsp. soy sauce
1 clove minced garlic
red pepper flakes
3 Tbsp. coconut creamer (or coconut milk plus brown sugar to taste for sweetness)
Juice of 1/2 a lime
brioche dinner rolls
butter
In a large mixing bowl, combine the ground chicken (or turkey), breadcrumbs, dried ginger, pinch of salt & pepper, 1 Tbsp. soy sauce, 2 cloves minced garlic, and sliced scallions. Mixed together by hand and form into slider patties. Pour 2 Tbsp. olive oil into a skillet over medium high heat. Cook the burgers until browned on both sides and the internal temperature is at least 165* F (poultry burgers should be completely cooked through).
Slice the carrot and cucumber into ribbons. In a small bowl, add the carrots and cucumbers, rice wine vinegar, and a pinch of sugar and salt. Stir to combine and allow to sit for 5-10 minutes.
For the sauce, mix together the peanut butter, 1 clove minced garlic, 3 Tbsp. soy sauce, a pinch for red pepper flakes, 3 Tbsp coconut creamer, and the juice of 1/2 a lime.
Slice the brioche dinner rolls in half, butter the insides and toast on a griddle or in a skillet (you can also pop them under the broiler, but watch them closely so they don't burn!).
To assemble the burgers, spread some peanut sauce onto a toasted bun. Top with a burger patty, some pickled carrots and cucumbers, a sprinkling of the chopped cilantro and basil, and more peanut sauce on the top bun. ENJOY!
