BAKE WITH ME! ZUCCHINI BREAD FOR THE VEGGIE HATERS

Today I'm baking Zucchini Bread--the perfect breakfast treat for you and your veggie hating children, haha! My kids are actually pretty good about eating their vegetables, but across the board they can't stand zucchini! Enter...Zucchini Bread! Chocolate chips & dried cranberries make tasty mix-ins, but even on its own, this bread is moist and tastes great. ENJOY!

ZUCCHINI BREAD
1.5 c. all purpose flour
1.5 tsp. cinnamon
pinch nutmeg
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
2/3 c. sugar
1/2 c. olive oil
1 c. grated zucchini
1 beaten egg
1 tsp. vanilla extract
1/2 c. chocolate chips

Preheat oven to 350*. In a large bowl, whisk together the flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Add in the sugar, olive oil, zucchini, egg, and vanilla extract. Stir to combine. Mix in the chocolate chips. Grease and flour a 9x5" loaf pan. Spread the batter evenly into the pan. Bake at 350* for about 50 minutes or until golden and a toothpick inserted into the middle of the bread comes out clean. Cool on a wire rack. Use a butter knife to loosen the perimeter of the bread then remove and slice.
