Chicken Kyiv with Ukrainian Potato Salad

I made this dish over the weekend and thoroughly enjoyed it!

Chicken Kyiv

2 chicken breasts, pound thinly
1/2 cup butter
2 Tbsp parsley, chopped finely
4 cloves garlic, minced
salt & pepper to taste
1 egg, beaten
All-purpose flour
Panko

Ukrainian Potato Salad

1 pound potatoes, boiled (I used baby potatoes)
3 medium carrots, diced
1/3 cup ham, diced
2 hard-boiled eggs, chopped
2 Tbsp. chopped pickles
1/2 red onion diced
Mayonnaise
