VEGAN BHUTANESE EMA DATSHI CURRY

Welcome to my vegan trip around the world, where I aim to cook a vegan version of every nation's national dish.

Get ready to bring the fire! This unique curry from Bhutan uses an insane amount of chillies, balanced by my own tangy vegan cottage cheese. It's an interesting one - give it a go!

Ingredients for the ‘datshi’ cheese:
350g extra firm tofu
4 tbsp nutritional yeast flakes
1 tbsp garlic powder
2 tsp white miso
1 tsp tahini
1 lemon, juice of
½ tsp salt
Pepper

Ingredients for the curry:
1 tbsp vegan butter
10 Thai chillies (red & green), sliced lengthways
1 onion, sliced
4 garlic cloves, sliced
1 tsp fresh ginger, grated
1 tomato, chopped
240 ml/1 cup water
120g vegan mozarella
Salt, to taste
