ROMANOV RECIPES: Printed Tver Gingerbread Cookies
On 13 October, 1916, Nikolai Von Bunting, the Governor of Tver, wrote this letter to Grand Duchess Olga Nikolaevna, and enclosed it with a box of his city's famous printed gingerbread cookies (pryaniki):
"Your Imperial Highness,
I take the courage to present to Your Highness and Grand Duchesses Tatiana Nikolaevna, Maria Nikolaevna and Anastasia Nikolaevna some of our Tver gingerbread cookies. I apologize for not bringing them personally, but the factories in Tver are restless, owing to a delay in the delivery of sugar, and I cannot leave the city. Your Imperial Highness’s most devoted and faithful servant

One traditional recipe of the Tver gingerbread cookies is in the archive of the noble Bakunin family (second half of the 19th century). I present this recipe in the video.
TVER GINGERBREAD COOKIES
2 cups flour
2 cups honey
1 cup yoghurt
1 cup sugar
1.5 teaspoon baking soda
2 teaspoons freshly ground pepper
1 teaspoon cinnamon
Instructions:
Sift all the flour into the yoghurt, add baking soda; add the spices into warmed up honey, add to the flour mixture. Knead the dough. Grease a flat baking pan with butter, roll out and flatten the dough onto the greased baking pan. Bake until it starts browning and easily comes off the baking pan surface.
