STRAWBERRY SHORTCAKES:
BISCUITS
2 c. all purpose flour
1 Tbsp. sugar
1 Tbsp. baking powder
1/4 tsp. salt
1 stick unsalted butter, melted & cooled slightly
1 c. milk
STRAWBERRIES
1 lb strawberries
1 Tbsp. sugar
1/4 tsp. vanilla extract
WHIPPED CREAM
1 c. heavy whipping cream
3 Tbsp. sugar
1/4 tsp. vanilla extract

Preheat oven to 450*. In a large mixing bowl, whisk together 2 c. flour, 1 Tbsp. sugar, 1 Tbsp. baking powder, and 1/4 tsp. salt. Add the melted butter and milk and stir with a wooden spoon to combine. Use a large cookie scoop or spoon to portion out the batter onto a silicone lined sheet pan (they can be pretty close together because this batter doesn't spread). Bake at 450* for about 10 minutes or until lightly golden on top. Cool.
Dice the strawberries and place into a bowl. Sprinkle 1 Tbsp. sugar and 1/4 tsp. vanilla extract over top. Stir to combine. Cover and refrigerate for at least 1 hour so the juices start to develop.
In a large bowl, add the heavy whipping cream, 3 Tbsp. sugar (or less if you don't want it to be as sweet), and 1/4 tsp. vanilla extract. Whip with an electric mixer until thick.
To assemble, slice a biscuit in half with a serrated knife. Top with a couple spoonfuls of strawberries and a large dollop of whipped cream. ENJOY!
