Makes about 4 servings

1/2 bag rice noodles, soaked in warm water
8 oz/227 g boneless chicken thighs, medium dice
8oz/227g shrimp, peeled, deveined & split
3 eggs
1 cup/89 g cabbage, shredded fine
2 cloves garlic, chopped
4 scallions whites chopped, greens cut on bias

The sauce

1/2 cup/118 ml tamarind concentrate
1/4 cup/32 g palm sugar
1/4 cup/59 ml fish sauce
2-3 tbsp/23-32 g garlic chili sauce

Garnish

1/4 cup/32 g roasted peanuts, crushed
Cilantro leaves
Lime wedges
Scallion greens
