This recipe for a crust-free cheesecake is a twist on a classic Eastern European dessert called zapekanka, or farmer's cheese casserole. But instead of using cow farmer's cheese, this recipe calls for soft goat cheese, making it a safer option for those with dairy sensitivities. To make it keto-friendly, the recipe uses allulose for a caramelized crust.

Here's what you'll need:

- 8 oz (220 g) soft goat cheese
- 3 eggs
- 2 tbsp. sour cream
- 4 tbsp allulose + 1 tbsp
- 3/4 cup almond flour
- 1 tbsp psyllium
- 1/2 tsp baking powder
- A few drops of vanilla
- 3-5 strawberries

Instructions:

1. Preheat your oven to 180C.
2. In a mixing bowl, combine all ingredients except for the strawberries and 1 tbsp of Allulose. The dough should have a consistency similar to 15% sour cream. Use sour cream and almond flour to adjust the consistency as needed.
3. Use a silicone mold for baking. Pour the dough into the mold and add the sliced strawberries, decorating the top as desired. Sprinkle 1 tbsp of Allulose on top of the berries.
4. Bake for 17 minutes on the middle rack of the oven.
5. After baking, let the cake cool down in the oven with the door open.
