Raspberry Leaf Tea. How to ferment leaves

I fermented raspberry leaves. Because what's better than raspberry tea? Right, tea from raspberry, cherry, and black currant leaves. But that's the next step (just like making kombucha, picking and pickling mushrooms, planting geraniums, and transplanting rhododendrons into a better pot).

Meanwhile...

Cut off raspberry and blackberry leaves (so the bushes don't become completely bare). You can do this several times a season.

DO NOT WASH the leaves.

Spread them on a paper or cotton towel to dry for 10-12 hours. If it's hot where you are, cover them with a towel. The leaves should not get too moist or dry - they should be flexible.

Roll out the leaves. You can do it between your palms or, like Havanese women roll a cigar, on your thigh.

Place them in a container under a press with access to air. Cover the top with a clean towel.

After 12 hours, take out the leaves, chop them with a knife, and dry them for half an hour in a slightly opened oven at the lowest temperature (for me, it's 80 degrees Celsius).

Store in a closed container.
