EASY BIKO RECIPE (15 DAYS OF KAKANIN)

What's your favorite kakanin? 🌾 We love rice cakes so much that we just had to make a whole series about it. This is ✨ 15 Days of Kakanin with Chef Martin ✨ We will be cooking all of your favorite kakanins in our studio using ingredients that are easily accessible and tools that might already be in your kitchen! 👨🏻‍🍳

We are kickstarting this series with the classic biko. Did you know that there are superstitions surrounding this kakanin during Undas? It is usually cooked by the elderly during this sacred holiday to remember their loved ones that have passed. 🕊️ Try this recipe at home today! 🔥

BIKO
Ingredients:
2 cups glutinous rice, washed and soaked in water for 2 hours
2 cups water
1 bundle pandan leaves
1-1/2 cups brown sugar
3 cups coconut milk
½ tsp salt
2 cups coconut cream

Procedure:
1. In a pot, bring rice, water, and pandan to a boil. Simmer covered for 10 minutes or until most of the water has been absorbed.
2. Add sugar, milk, and salt. Cook over low heat while stirring until rice is fully-cooked.
3. Make latik by simmering coconut cream until reduced and strain out the oil. Top kakanin with latik. Makes 8 servings.
