SHORTCUT PUTO BUMBONG
Ingredients:
2 cups glutinous rice flour
water
1 tbsp. ube extract
1 cup margarine
2 cups fresh grated coconut
1 can condensed milk
½ cup muscovado sugar
1/2 block of processed cheddar cheese
Procedure:
1. Cut 4 x 2 inch pieces of of aluminum foil and brush each with margarine.
2. In a bowl, mix together glutinous rice flour, ube extract, and water. Combine thoroughly until it becomes a dough. Grate the dough.
3. Gather around 2-3 tablespoons of the grated dough and gently shape into logs along the pieces of aluminum foil.
4. Steam the shaped dough for 15-20 minutes over medium heat. Pro-tip: Place a cheesecloth under your steamer lid so the water doesn’t drip on the dough.
5. Once cooked, carefully peel off the aluminum foil and top the puto bumbong with more margarine, fresh grated coconut, condensed milk, muscovado sugar, and processed cheese.
