EASY PUTO BINGKA RECIPE (ILOILO SPECIALTY)

What if puto and bibingka had a baby? 🤔 We tried “Puto Bingka” in Iloilo and we couldn’t wait to try our own version in the studio. 👨🏻‍🍳 It’s easy to make and there’s no long waiting times involved! We read that there are two types of puto bibingka that are popular in Iloilo—the flat coconut-filled version that is sold at the plazas of Iloilo City, and the “Bingka sa Mohon” which looks like a toasted puto. 🔥

This recipe uses all the basic ingredients and equipment that you already have in your kitchen. Try this at home now! 🕺

BINGKA ILONGGA (PUTO BINGKA / BINGKA SA MOHON)

Ingredients:
½ cup margarine
1-½ cups rice flour
2-1/2 tsp baking powder
1 cup coconut cream
⅓ cup evaporated milk
1 cup sugar
2 pc eggs
1-½ cups all-purpose flour
1-½ cups shredded young coconut
banana leaves, ran through fire until malleable

Procedure:
1. Preheat your oven to 375 F and line your 3 inch diameter cupcake molds with banana
leaves.
2. Combine rice flour and baking powder. Set aside. Combine coconut cream and evaporated milk then set aside.
3. In a bowl, cream together margarine and sugar. Mix in eggs. Add milk mixture alternatively with flour mixture in two additions.
4. Pour into prepared molds and bake for 15 minutes. Broil for 2-3 minutes.
5. Brush with more margarine while still warm. Makes 12 servings.
