DELICIOUS KARE KARE (CHRISTMAS RECIPE!)
Christmas recipes? 🎄 We got you! Kare Kare is everyone’s favorite Filipino peanut stew. Making this is truly a labor of love, as traditionally it involves waking up in the wee hours of the morning to soften the meat and to prepare the vast amount of ingredients that you need to make the perfect bowl. 🍲 Serve this with some bagoong and steaming rice and you’re ready for a holiday feast like no other! ✨ Do you also have fond memories of eating Kare Kare? ❤️
KARE-KARE
Ingredients:
1 kg oxtail
2 pc bay leaves
1 tbsp whole peppercorns
enough water to fill the pot
¼ cup atsuete oil (2 tbsp atsuete seeds + ¼ cup oil, cooked for 2 minutes)
1 pc red onion, chopped
5 cloves garlic, minced
½ cup unsalted roasted peanuts
2 tbsp smooth/creamy peanut butter
½ cup reserved oxtail stock
2 tbsp freshly powdered rice flour
Veggies:
1 tbsp oil
eggplant, cut in half and then into 2 inch pieces
bok choy, blanched in boiling water for 1-½ minutes
sitaw, blanched in boiling water for 1-½ minutes
Procedure:
1. In a pot bring oxtail, bay leaves, peppercorn, and water to a boil. Simmer for 15 minutes. Discard the water and place the oxtail in a pressure cooker or in a pot. Fill with enough water to cover the meat by 1 inch and cook for 45 minutes if using a rice cooker and 3-½ hours if using a pot. Set aside.
2. Prepare your veggies by searing the eggplants in hot oil for 1 minute on each side. Blanch your bok choy and sitaw in boiling water for 1-½ minutes.
3. In a pot, heat your atsuete oil and saute onions and garlic. Add peanuts, peanut butter, and oxtail stock. Bring to a simmer. Mix in rice flour and cook according to thickness preference. Add in the oxtail and simmer for another 5 minutes.
4. Serve with veggies, bagoong, and freshly steamed rice. Makes 6 servings.
