This southern French recipe is easy to prepare and will give you a lot of pleasure, I guaranteed that.
This presentation is wide different of the film's ratatouille presentation which is the tian provençal recipe, it alows cook crusty vegetables and better flavors, well I think so, I hope you like it.
Preparation for: 3 persons
Time: 1 hour
Ingredients
- 1/4 lb Red bell pepper
- 1 lb yellow squash
- 1 lb eggplant
- 4 medium garlic cloves, minced
- A pinch of dried oregano
- A pinch of dried thyme
- A spring of fresh oregano
- 3/4 cup of extra virgin olive oil
- 1/8 lb grated parmesan cheese
- Salt and black pepper to taste
Directions
Wash all vegetable.
Retire eggplant stem and cut them into 1/4 inch diced , set aside. Retire the yellow squash stem and cut into diced, in both cases do not retire the skin. Retire the red bell pepper stem and cut into 1/4 inch diced.
In a skillet saute the eggplant in hot olive oil for about 2 minutes and place in a strainer set over a bowl, then cook the yellow squash for 3 minutes or less and set in the strainer, if necessary add more olive oil to the skillet. Cook the red bell pepper in the same skillet for about 2 minutes.
In a bowl integrate the eggplant, the yellow squash and the red bell pepper adding the raw minced garlic, the parmesan cheese, the pinch of dried thyme and oregano, stir very well, add salt and pepper to taste.
The parmesan cheese adds creaminess to the mixture, it is fantastic, I love it
Presentation: Onto a large plate serve the mixture using a three inch diameter circle molde and two inch tall. Add olive oil on top and decorate with the spring of fresh oregano.
Serve with slices of crusty bread.
