Slow Cooker Carnitas | Carnitas Recipe Slow Cooker | Cooking Up Love

Our Slow Cooker Carnitas are moist, tender, juicy with rich porky-ness and great flavor from the spice rub, orange juice and beer. Once the carnitas finish cooking in the crockpot, shred the meat apart, then pop the pork under the broiler to add little crispy bits to the edges. Add a little sauce and serve as tacos, burritos or enchiladas!

This slow cooker carnitas recipe makes about 12 - 16 street tacos. If you'll have leftovers, keep the extra pork in the juice, then shred and crisp it when you're ready to use it next.

Slow Cooker Carnitas Recipe Ingredients
3-4 lbs pork shoulder (aka pork butt)
1 large orange, juiced and zested
2 tsp chili powder
1 tsp garlic powder
1 tsp dried oregano
1 tsp onion powder
1/2 tsp ground black pepper
8 oz of beer

Slow Cooker Carnitas Recipe Directions
For the spice rub, measure out a teaspoon kosher salt, a teaspoon of cumin, two teaspoons chili powder, a teaspoon garlic powder, ½ tsp oregano, ½ tsp onion powder and ½ tsp ground black pepper. Give this a good stir and set it aside.

Next, juice and zest one orange. For these slow cooker carnitas orange juice is going to tenderize the meat and the orange juice adds a little sweetness to the carnitas.

For the pork, I’m using a pork shoulder butt. This one is almost 8 pounds and has the bone-in. It’s enough for 2 meals, so I'll cut it in half, and then trim up the boneless piece, removing the hard fat along the outside.

How To Make Carnitas Slow Cooker
Today I'll be making these crockpot carnitas by cooking them on HIGH for 4 hours, and to make sure it's done in time for dinner, I'll cut the pork into 3 equal sized pieces. If you have more time, you could also cook the pork (with or without cutting into pieces) on low for 6 - 7 hours.

Generously rub the spice mixture all over the pork, so it's covered.

In the slow cooker, add the orange juice and zest, and about a cup of beer. Add the pork pieces, they’ll simmer in these aromatic flavors.

After 3 1/2 - 4 hours, test the pork for tenderness. When it's done, take the meat out, and as it cools, use two forks or meat claws to shred the pork. You can see how tender and juicy this is and it smells amazing!

Crispy Slow Cooker Carnitas Directions
To get the carnitas nice and crispy, turn the broiler on HIGH, preheating it for 5 - 10 minutes. Stick the shredded carnitas under the high heat broiler for about 5 minutes. You can also pan fry the shredded pork with a little oil get the crispy bits to the edges.

Serving Crockpot Carnitas
This recipe will makes about 12 - 16 street tacos. We love to eat carnitas street taco style, with onion, cilantro, I like mine with fresh jalapenos, radishes and homemade lime crema. We’ll have leftovers, and so I’m keeping the extra in the pot and will shred and crisp it up when we’re ready to use the leftover carnitas. Add a little sauce and serve as tacos, burritos or enchiladas!
