Mexican Wedding Cookies | Snowball Shortbread Cookies | Christmas Cookies

Mexican Wedding Cookies are one of the most favorite Christmas cookies! You may know these little nut shortbread cookies as snowballs, Russian tea cakes, polvorones, powdered sugar cookies, walnut shortbread or pecan shortbread balls. They’re bite size and everyone loves how they melt in the mouth! You'll love these easy Christmas cookies, and they look so pretty on a cookie platter or tin.

We like to use a combination of finely chopped nuts and add more coarse nuts for the texture. Today I'm using walnuts in our snowballs recipe. You could also use pecans or almonds. I'm making the Mexican wedding cookies in balls about an inch in size, and this recipe will make about 80 cookies this size. You can make the cookies larger, like little snowballs, increase the baking time accordingly.

Mexican Wedding Cookies Ingredients
1 1/2 cup chopped nuts (I'm using walnuts, you can also use pecan or almonds)
1/4 teaspoon kosher salt, crushed
16 tablespoons salted butter, softened
1/2 cup granulated sugar
2 cups flour
1 teaspoon vanilla
1/2 cup powdered sugar

Mexican Wedding Cookies Directions
Finely chop 1/2 cup of the chopped nuts using a knife or food processor. Add about 1/4 teaspoon kosher salt, and give it a quick crush in a mortar and pestle for finer grains that will mix in more easily. Mix the salt and nuts together and set aside.

Next, add 16 tablespoons of softened butter to a large mixing bowl. Beat on medium speed for about a minute until it's smooth. Add 1/2 cup of granulated sugar, and beat on medium speed for about 2 minutes until the mixture is light and fluffy. Scrape down the sides of the bowl, and then add 1 cup of flour. Mix on medium speed to incorporate the batter. Scrape the sides of the bowl. Add 1 teaspoon of vanilla extract, and then the remaining cup of flour. Mix on medium speed until blended. Add the finely chopped nuts, and the 1 cup of chopped nuts, and use the blender to combine until just blended.

Divide the dough in half, and place in the refrigerator to chill for about 30 minutes. Once the dough is chilled, begin preheating the oven to 325 degrees.

Roll the dough into balls about an inch in size, and place on a parchment paper lined baking sheet, about 1/2 inch apart. Bake the cookies just until they are a light golden brown on the bottom and a very pale golden brown on top. For me, this was 15 - 18 minutes. Cool the cookies on the baking sheet for about 5 minutes.

Measure out about 1/2 cup of powdered sugar in a bowl, and toss the warm cookies in the powdered sugar. Let the powdered cookies cool completely on a wire rack. Once they're cooled, you can coat again with more powdered sugar and store in an airtight container.
