Chocolate Truffle Snow Skin Mooncakes 巧克力松露冰皮月饼#软心巧克力

Ingredients 材料:

Skin 月饼皮 :

130g cooked glutinous rice flour (gao flour) (糕粉)
150g icing sugar, sifted (糖粉)
20g cocoa powder, sifted (可可粉)
160ml cooled boiled water (白开水)
30g shortening (白油)

Combine all the ingredients and mix well. Continue to knead into a smooth dough. Divide dough into 60g each.

Chocolate Truffles 巧克力松露:
40g dairy whipping cream (动物性鲜奶油)
100g dark cooking chocolate (黑巧克力)
10g butter (奶油)

1/2 tbsp Brandy, optional (白兰地酒)(可选择不加)
Some cocoa powder (可可粉)

Double-boil all the ingredients until melted and smooth. Remove and leave to cool, add in brandy mix well, wrap with cling film and chill in the fridge until set. Divide into small portions 25g each, round up and coat with cocoa powder.

400g lotus seeds paste (莲蓉馅)
40g cooking chocolate, melted (烘培巧克力)
30g almond nib (roasted) (烘香杏仁粒)
