High Protein (41g!) Cottage Cheese Banana Protein Pancakes Recipe

Start your day strong with over 40g protein! These High Protein Cottage Cheese Banana Pancakes are fluffy, nutritious, and sooooo delicious. 🍌💪 They're the perfect blend of sweet banana, creamy cottage cheese, and protein to fuel your morning.

Ingredients:
1 egg
1 tsp vanilla extract
1 ripe banana (use half for the batter, reserve the other half for topping)
3 Tbsp cottage cheese
3 Tbsp oats (I use gluten free oats)
2 Tbsp flour (1:1 gluten free, oat or regular flour will all work)
3 Tbsp vanilla protein powder
1/2 tsp baking powder

Directions:
Whisk 1 egg in a bowl. Mix in 1 tsp vanilla. Mash ½ banana; combine with 3 Tbsp cottage cheese. Stir in 3 Tbsp oats, 2 Tbsp GF flour, 3 Tbsp vanilla protein powder, ½ tsp baking powder. Butter pan, medium heat. Pour ¼ cup batter; cook until golden, flip, repeat. Top with banana slices, drizzle maple syrup. Enjoy!
