Chocolate Pretzel Crinkle Cookies | Mad Genius | Food & Wine

Chocolate crinkle cookies are often more cloying than satisfying. By substituting the flour with Glutino pretzels, this version of the holiday staple is not only a gluten-free chocolate cookie but also perfectly salty/sweet with the best chewy center.

Ground the pretzels and whisk with cocoa and baking powder. Separately, beat granulated sugar, oil, eggs, and vanilla until combined. Stir in ground pretzel mixture until the dough comes together. Cover with plastic wrap and refrigerate just until firm.

Shape the dough and cover with powdered sugar. Arrange the cookies on a baking sheet, baking until the tops look cracked. Transfer cookies to wire racks and let cool completely.

These delicious gluten-free chocolate chip cookies are quick and easy.

Ingredients
8 ounces gluten-free pretzels (such as Glutino)
3/4 cup unsweetened cocoa (about 2 1/2 ounces)
1 tablespoon baking powder
1 1/2 cups granulated sugar
3/4 cup canola oil
4 large eggs
1 tablespoon vanilla extract
1 1/2 cups powdered sugar (about 6 ounces)
