GARGANELLI PASTA | with Braised Lamb and Pumpkin

A perfect Fall dish, garganelli pasta with braised lamb and pumpkin. Garganelli is one of those classic fresh pasta shapes that's easy to make by hand. The process is simple: make your fresh pasta dough, roll it out, cut the pasta sheet into squares, then form your Garganelli. You could purchase it dry, but that sort of takes the fun out of cooking this dish doesn't it?

GARGANELLI WITH PUMPKIN AND BRAISED LAMB
(easily serves 4-6)
Lamb Shank, 3-3.25 lbs (around 4 shanks)
Baharat Spice Blend, 3 Tbsp
Sea Salt about, 2 tsp and as needed
Canola Oil, 1/4 cup
Carrots, 4 oz (about 1 medium carrot)
Celery, 4 oz (about 2 stalks)
Yellow Onion, 8 oz (about 1 small onion)
Red Wine, 2 cups
Whole Canned Tomatoes, 14 oz
Tomato Paste, 3 Tbsp
Chicken Stock, 2 cups
Fresh Pumpkin, 12 oz

BAHARAT SPICE BLEND
Ground Black Pepper, 1 Tbsp + 2 tsp
Ground Coriander, 2 Tbsp
Ground Cumin, 2 Tbsp + 1 tsp
Ground Cloves, 1 tsp
Ground Allspice, 2 tsp
Ground Cardamom, 1.25 tsp
Ground Cinnamon, 3 Tbsp
Sweet Paprika, 2 Tbsp
Ground Nutmeg, 1 tsp
Ground Ginger, 1 tsp
Cayenne Pepper, 1 tsp
