Artisan Bread With Pre-Ferments: Poolish

A poolish is fabulous pre-ferment to use when making artisan bread. Mix up about half the dough the night before with just a tiny bit of yeast and allow it to ferment all night. Wow! What a taste it brings to artisan bread--delicious!
