Einkorn Sourdough Bread w/ Beef Bone Marrow

Over the last several months I've been making sourdough bread from Einkorn wheat. Although I had stuck to a gluten-free diet for several years, I discovered that I could digest Einkorn wheat without any issues. The gluten in the Einkorn wheat is easier to break down and the sourdough fermentation process likely aids with digestion as well. Studies have shown that eating sourdough bread also results in a more moderate and steady rise in blood sugar, resulting in longer lasting energy and less cravings as compared to typical commercially made bread.

From what I've read, the bone marrow itself seems to be a good source of fat-soluble vitamins and minerals, although I use it primarily for the flavor and because it is very satiating.
