What to do with a slightly stale bread? One day-old bread is perfect to make SUHARI, that is a Russian word for dried bread turned into a cracker.
Suhari (dried bread) was one of those foods that kept people alive during the war, famine, and siege of Leningrad. Suhari can be safely stored in a dry environment for a very long time. I like to keep it in a large container with a cover. Suhari don't last in our house. I made a surahi from 2 large loafs of bread, and the container was found empty in less than 2 months. What can I say, we love suhari!
