We have a popular cake in the Philippines called Sansrival. It sounds Spanish when you write and say it but If you write it in its proper form--"Sans Rival," it is French. Why do we have a French dessert in the Philippines?

According to legend, in the 1920s, It was invented when many Filipinos went to Europe to study. And once they are back in the country, they tried to recreate a French dessert cake--dacquiose, which is made of layers of almond and hazelnut meringue and whipped cream or buttercream on a biscuit base. However, they don't have a lot of hazelnuts and almonds available or maybe it was too expensive? So, they end up using a local nut, "kasoy" or cashew.

We are going to use my Mom's recipe, which is ever-changing, and largely depends on what we have in the kitchen. My mom majored in Industrial Arts and taught high school kids--including my sister and I--we studied in Cabanatuan City Science High School where my mom works (She used to teach in the College of the Immaculate Conception but moved to Science High after a few years). My mom would teach Home Economics, Music, Art, P.E., Health, and Computer. Sometimes my mom would cover for her co-workers and would end up teaching in my class, which is kind of dreadful and cringey.
