If you love island vibes, palm trees, and coconuts, this dessert is for you. Buko pandan is one of the easiest desserts you can make. Buko is young coconut and pandan or screw pine is an aromatic green plant that grows all over Asia. If vanilla and lavender would make babies, pandan is the baby. Pandan is used ubiquitously in desserts and grilled dishes all over Asia. You'd see it in rice cakes, grilled chicken, grilled seafood, as a flavoring for the famous kaya jam (coconut jam) of Malaysia/Indonesia/Singapore, and as a flavoring for plain white rice.

This easy salad is usually made with green gelatin flavored with pandan, sago pearls, young coconut, coconut sport (mutant coconut), kaong (palm fruit), nata de coco--fermented coconut water, condensed milk, evaporated milk and table cream. It's usually soupy.

You can make your own version. I like my buko pandan creamy, full of different textures, and layered with flavors. So, I replaced the usual water in the gelatin with store bought coconut water, replaced sago with boba, and no evaporated milk.
