Phyllis Stokes' Gotta Have Something Sweet Cake
I reproduce one of Mom's most popular desserts. I'm admittedly not much of a baker, but this one is pretty easy and turned out delicious!
Ingredients for the cake:
1/2 cup salted butter (1 stick), softened
1 cup sugar
1 teaspoon vanilla extract
2 large eggs, beaten
1 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
dash of salt
1/2 cup buttermilk
Ingredients for the glaze:
4 tablespoons butter (about 1/2 stick)
1/4 cup buttermilk
1 3/4 - 2 cups powdered sugar
1/2 teaspoon vanilla extract
Directions for the cake:
1. In a large bowl add the softened butter, sugar, vanilla, and eggs. Mix until blended well--about 2 minutes.
2. In a separate bowl, add the flour, baking powder, baking soda, and salt. Whisk together until mixed well..
3. Alternate adding 1/3 of the flour and 1/2 the buttermilk until its all in the batter, stirring just until it's mixed. Pour batter into a greased 9" x 13" casserole dish. Bake at 350F (180C) until the top springs back when pressed (about 30 minutes). Remove and let cool.
Directions for the icing:
1. In a small saucepan, melt the butter over medium low heat, stirring constantly.
2. Add the powdered sugar, vanilla, and buttermilk, and stir until desired consistence (about 3-5 minutes). Add more buttermilk if it's too thick.
Pour the glaze over the cake, spreading evenly. Make sure some of it runs down the side!
