Phyllis Stokes' Texas Tornado Cake
Reproducing one of Mom's more popular cake recipes. This one is super easy and virtually "Steve proof." Here's a link to Mom's original: https://www.youtube.com/watch?v=i8jyrEl31vs
Ingredients:
1 1/2 cups sugar
2 eggs, beaten
1 16 oz can fruit cocktail (in syrup)
2 teaspoons baking soda
2 cups all purpose flour
1/4 cup brown sugar
1 cup chopped nuts
For the glaze:
1/2 cup salted butter, melted
3/4 cup sugar
1/2 cup evaporated milk
1 cup coconut flakes
Directions:
1. Mix sugar, eggs, and fruit cocktail in a large bowl. Don't use a mixer!
2. In a separate bowl, whisk together flour and baking soda. Add flour mixture to sugar/fruit/egg mix in the first bowl and stir until batter forms. Make sure all the dry ingredients are incorporated.
3. Grease and lightly flour a 9" x 13" cake pan/casserole dish. Pour batter in and spread evenly. In a separate bowl, mix together the brown sugar and chopped walnuts. Cover the top of the batter evenly with the brown sugar/walnut mixture. Bake at 325F (165C) for 35-40 minutes.
4. For the glaze: In a saucepan, melt the butter. Add 3/4 cup sugar and evaporated milk and stir. Boil over medium high heat for 2 minutes, stirring to keep the bottom from burning. Add coconut flakes and stir. Set aside.
5. When cake is done, remove from oven and let cool for 5 minutes. Spoon glaze evenly over cake. Cool before serving.
