Sheet Cake With Fresh Coconut Icing

This cake is super moist, the icing is made with one whole fresh coconut.

Watch my struggle learning how to grind fresh coconut in the Vitamix dry beaker.
Any suggestions would be helpful, thanks.

Here is the recipe I used.

The sheet cake:
1 cup softened butter, 2 sticks
2 cups sugar
4 large eggs
1 teaspoon vanilla flavoring
2 3/4 cups sifted self-rising flour ( sift and then measure)
1 1/4 cups buttermilk
1/2 teaspoon baking soda

Bake in 13"x15" sheet cake pan at 350 degrees for 25-30 minutes.

Icing:
2 tablespoons melted butter
1/4 cup buttermilk
1/2 teaspoon almond flavoring
2-3 cups confectionary sugar
Meat from one fresh coconut, ground fine
1/4 cup coconut water
