Phyllis Stokes' Rice Pudding

This was one of Mom's personal favorites. I messed this up a bit by using too much rice, but it still tasted great. Especially with a pat of butter!
Ingredients:
3 cups of cooked rice
3/4 cup sugar
3 eggs
2 1/2 cups whole milk
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Optional: 1 cup fruit, raisins, fruit cocktail, or chopped dates

Directions:
1. Whisk together sugar, eggs, milk, butter, spices, salt, and vanilla.
2. Mix in rice, then your optional addition. I used dates.
3. Pour into a greased 9" x 13" casserole dish and bake at 325F for 1 hour. Stir from the bottom at the 30 minute point.
4. Serve warm with butter or whipped cream.
5. Refrigerate leftovers.
