Homemade Apple Pie with Lattice Top

I've always wondered how to make a lattice topped apple pie--it's really easy! I made this pie with Granny Smith green apples and was easy on the sugar. You can use different, sweeter apples and/or add more sugar if you'd like. Just missing the ice cream!

Ingredients:
2 ready made (or homemade) pie crusts (1 for top, 1 for bottom)
7 large apples, peeled, cored, and cut into wedges
2 tablespoons lemon juice
2/3 cup white sugar plus a little more for sprinkling on the top
1/4 cup (1/2 stick) unsalted butter
1/4 teaspoon ground cinnamon
pinch of ground nutmeg
1 egg lightly beaten

DIrections:
1. In a large bowl, toss apple wedges with lemon juice. Add sugar and toss to coat evenly.
2. Melt butter over medium high heat in a large skillet. Add apples and cook until sugar dissolves and mixture begins to simmer (about 2-3 minutes). Reduce heat to medium low and cook until apples soften and release most of their juices (about 7-10 minutes).
3. Strain apples in a colander over a bowl to catch the juices. Set apples aside and pour juice back into skillet. Cook over medium heat until juice thickens (about 10 minutes).
4. Toss apples with spices and the reduced juice from the skillet. Set aside to cool completely.
5. Add apples and juice to pie crust.

For the lattice top:
6. Roll out 2nd pie crust to 1/2 inch thickness. Use a pizza cutter or butter knife and cut into 1/2 inch wide strips.

8. Brush top with beaten egg and sprinkle with a little sugar to taste.
9. Bake at 375F for 50-60 minutes until crust is golden. Use aluminum foil around the edges to keep the crust from burning.
10. Cool for 3 hours before serving.
