Baked Cherry Tomato Feta Pasta

This came highly recommended by the Ravishing Mrs. Ritter. It's a super simple winner!

Ingredients:
1 pound cherry tomatoes, washed
4 cloves garlic, minced
1/2 white onion, diced (or 1 shallot)
Pinch of crushed red pepper flakes (or more if you want more kick)
salt/pepper to taste
8 tablespoons olive oil
7 oz (200g) block of feta cheese sliced in half lengthwise
fresh basil (or 2 tablespoons dried basil)

Directions:
1. Pre-head oven to 400F
2. In a large mixing bowl, add tomatoes, onions, garlic, chili flakes, salt and pepper, and olive oil. Toss to coat.
3. Pour into a small casserole dish and top with the feta.
4. Bake in oven for 20 minutes. Turn on broiler and cook an additional 5 minutes (or until desired level of doneness). Don't let the tomatoes burn!
5. Pour into bowl with cooked pasta and toss. Use reserve pasta water to thin it out if it is too thick.

Optional: Skip the pasta and serve with crusty bread.
