How to Make Flan de Leche in the Instant Pot - The Easy Low Cost Spanish Flan Recipe

Your classic Cuban, Mexican, or Spanish Flan made with sweetened condensed and evaporated milk is costing a little more than usual nowadays. There have been several requests here at the Cuban Redneck YouTube channel and website CubanRedneck.Com asking for a less expensive way to make FLAN - a 𝐜𝐡𝐞𝐚𝐩 𝐅𝐋𝐀𝐍 𝐑𝐄𝐂𝐈𝐏𝐄!

I am not going to sit here and lie to you by telling you that you can make a cheap Cuban, Mexican, or 𝐒𝐩𝐚𝐧𝐢𝐬𝐡 𝐅𝐥𝐚𝐧 of the quality, or the buttery feel of a flan made with sweetened condensed and evaporated milk. However, many restaurants make flans without sweetened condensed and evaporated milk and get away with it. In fact, throughout Asia, in places like Indonesia, Thailand, Vietnam, and even Spain, flan recipes usually call for whole milk instead of condensed or evaporated. Not only because of availability but also cost. Lower cost is the objective of this flan recipe. I will show you how to make a 𝐜𝐡𝐞𝐚𝐩 𝐟𝐥𝐚𝐧 without sacrificing flavor. This flan recipe is standard for every restaurant I have ever worked for and is ideal for anyone looking to sell baked goods.

As I implied, the way to cut the cost of a flan recipe is with milk. We need to exchange the sweetened condensed and evaporated milk with whole milk. That will require more protein, which is why we will use more eggs! Making a classic Cuban, Mexican, or Spanish 𝐅𝐥𝐚𝐧 𝐰𝐢𝐭𝐡 𝐰𝐡𝐨𝐥𝐞 𝐦𝐢𝐥𝐤 looks white and pale, but don't worry. Using a traditional 𝐂𝐫𝐞𝐦𝐞 𝐂𝐚𝐫𝐚𝐦𝐞𝐥 technique, our FLAN will have a nice honey color and a pronounced flavor of caramel and vanilla.

𝐇𝐨𝐰 𝐭𝐨 𝐌𝐚𝐤𝐞 𝐂𝐡𝐞𝐚𝐩 𝐅𝐥𝐚𝐧?

As I mentioned, this Flan Recipe is a response to a viewer who wants to make flans cheap enough that she can sell them. That will probably involve making multiple flans at one time. Many restaurants and catering companies use the following formula when making batches of 𝐅𝐥𝐚𝐧 𝐟𝐨𝐫 𝐬𝐚𝐥𝐞.

• ¼ Cup of Whole Milk
• 1 Egg
• 4 Tablespoons of Sugar

Multiply this formula to meet whatever quantity you need. I recommend using the MILK as the measuring constant but don't forget to account for an additional 15-20% of the added caramel and the eggs.
𝐇𝐨𝐰 𝐭𝐨 𝐌𝐚𝐤𝐞 𝐅𝐥𝐚𝐧 𝐂𝐚𝐫𝐚𝐦𝐞𝐥?

When making a 𝐠𝐨𝐮𝐫𝐦𝐞𝐭 𝐒𝐩𝐚𝐧𝐢𝐬𝐡 𝐅𝐥𝐚𝐧, most chefs choose to go with a dry caramel. What does this mean? You put sugar in a saucepan or Flanela (Spanish for Flan Mold) over low heat and wait for the sugar to caramelize. This slow and tidiest process requires a little practice before getting it right. Not only that, but this is a caramel that sets rather quickly. When making batches of Flan, you want something that is a little more fluid and stays soft longer. To achieve this, we'll make caramel with two parts sugar and one part water (Spring Water if Possible!). Please bring it to temp over medium heat, and once you get a little color turn off the heat. Once it gets to a light honey color, take it off the heat completely.
We will also need an even lighter caramel for the mixture. Usually, this is half the amount you made for the flan mold.

𝐅𝐥𝐚𝐧 𝐑𝐞𝐜𝐢𝐩𝐞 𝐚𝐧𝐝 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬

I am using a FLANELA (Flan Mold) for this 𝐅𝐥𝐚𝐧 𝐑𝐞𝐜𝐢𝐩𝐞 that measures 6" round X 2.5" high. It holds about 32 oz or 4 cups of liquid, and here are the ingredients for this size Flan.

𝐅𝐥𝐚𝐧 𝐂𝐚𝐫𝐚𝐦𝐞𝐥:

• ½ cup of sugar ¼ cup of water

𝐅𝐥𝐚𝐧 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

• ¼ cup of sugar ¼ cup of water (for caramel)
• 2 - cups of milk
• 4 - eggs
• ½ cup of sugar
• 1 - tablespoon of vanilla extract

𝐌𝐚𝐤𝐢𝐧𝐠 𝐭𝐡𝐞 𝐅𝐥𝐚𝐧

Bring the ¼ cup of sugar and ¼ cup of water to temp in a medium-deep saucepan. At the same time, heat the 2 cups of milk in the microwave for about 2 minutes. We want it hot, not boiling. The minute the caramel comes to a honey color, the milk a little bit at the time while stirring it. Do this until both are fully incorporated and set aside to cool down. Once it has cool down, let's add 2-3 tsp. of sugar and one of vanilla. Still it and taste for sweetness before adding the eggs. The mixture needs to be very sweet with a pronounced flavor of vanilla like a concentrate. The eggs will mild it by half!

Once you are satisfied with the taste profile of the milk mixture, let's add four eggs to a blender jar or mixing bowl. I'm using a blender, but you can do it by hand. After combining the eggs and the milk, blend it for about 10-15 seconds.

I a using the 𝐈𝐧𝐬𝐭𝐚𝐧𝐭 𝐏𝐨𝐭 for time's sake, but a stovetop or oven are some of your options. In the Instant Pot, you can make two at a time; regardless of how many, your Flan cooking time is 30 mins The stovetop will take 60 and in the oven 50. In the Instant Pot, a ½ cup of water will do. On the stovetop or over, you want to fill the container about ½ way up the 𝐅𝐥𝐚𝐧 𝐌𝐨𝐥.
