Salisbury Steak with Mushroom Gravy (TV Dinner)

It is the middle of the week, and you don't know what to make for dinner! How about the TV Dinner of all TV Dinners? I am talking about the legendary 𝐒𝐚𝐥𝐢𝐬𝐛𝐮𝐫𝐲 𝐒𝐭𝐚𝐤𝐞. Once America's best-selling TV dinner, the Salisbury Stake has fallen out of favor with Americans younger than 50! So much so that it is not even a menu staple at places like Waffle House, Golden Corral, and Cracker Barrel. I mean, you see from time to time, but there was a time when as you walked towards to seat, you saw everyone having the famous Hamburger Steak with mushroom and onion graving, best known as Salisbury Steak.

The 𝐒𝐚𝐥𝐢𝐬𝐛𝐮𝐫𝐲 𝐒𝐭𝐚𝐤𝐞 is the creation of Dr. James Salisbury. He was a pioneer germ theorist who used to prescribe the savory meal to combat digestive illness among soldiers during the Civil War. During the 70s, it became a staple of TV dinners and a way to attract buffet bargain hunters during the Carter years.

Dr. James Salisbury was born in New York, and perhaps why the name Salisbury Steak is most popular in the northeast. I often see it listed on restaurant menus as hamburger steak in the south. And that is how it is usually found on my dinner table as an afterthought for a rained-out BBQ weekend, leftover hamburgers from a weekend cookout, or leftover meatloaf.

Although many would argue that a Salisbury Steak, a Hamburger Steak, and a Meatloaf Steak are the same, I often see the Salisbury Steak served with mushroom gravy. In contrast, Hamburger Steak is usually served with onion or white gravy. I will make this Salisbury Steak recipe with an onion-mushroom gravy and one that is not over the top, dominated by the taste of Worcestershire sauce!

Don't matter if you call it Salisbury Steak, a Hamburger Steak, or Meatloaf Steak. One thing you have to keep in mind is that this is a super easy recipe. This recipe is a failure only if allowed to be. Push comes to shove. If you don't have time to deal with ground beef, consider frozen hamburger patties. And the recommended mushroom and onion gravy.

𝐒𝐚𝐥𝐢𝐬𝐛𝐮𝐫𝐲 𝐒𝐭𝐞𝐚𝐤 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

• 1 - lb. of Ground Beef (85% lean)
• 1 - Tsp. Salt, Black Pepper, Italian Seasoning, Ketchup, Mustard
• ½ Tsp. of Worcestershire Sauce, Soy Sauce, Smoked Paprika
• 1 - Beef Bouillon (broken up)
• ½ - Onion (finely chopped)
• ½ - Cup of Seasoned Bread Croms like Vigo
• 2 Eggs (beaten)

𝐒𝐚𝐥𝐢𝐬𝐛𝐮𝐫𝐲 𝐒𝐭𝐞𝐚𝐤 𝐌𝐮𝐬𝐡𝐫𝐨𝐨𝐦 𝐚𝐧𝐝 𝐎𝐧𝐢𝐨𝐧 𝐆𝐫𝐚𝐯𝐲:

• 1.5 Cups of Beef Broth, Water
• 2 - Cup of Sliced Mushrooms
• ½ - Onion (1/4 coarsely chopped, the rest thinly sliced)
• 1 - Tsp. Corn Starch (or 1 Tbsp. of flour)
• ½ - Tsp. Worcestershire Sauce
• 1 - Tbsp Tomato Paste
• 3-4 Cloves of Garlic

𝐇𝐨𝐰 𝐓𝐨 𝐌𝐚𝐤𝐞 𝐒𝐚𝐥𝐢𝐬𝐛𝐮𝐫𝐲 𝐒𝐭𝐞𝐚𝐤𝐬

The first thing we need to do is the patties. And as I mentioned before, when push comes to shove, consider pre-made high-quality hamburger patties. I have and if you are feeling daring, consider bison burgers. But as far as this recipe, it does not get any easier. Break down the ground beef, pre-mix the dry spices and dust the meat evenly and allow it to sit on the fridge for a little while. Add the onion, the bread crumbs, and the wet ingredients and mix it until thoroughly combined without overworking the meat. Another option is pre-making the patties, freezing them, and having them available for that midweek day when nothing has gone right. If you are going to freeze the patties, you can taw them out, but not all the way, 20-30 minutes at room temp will suffice.

Let's start by searing the patties. A bit of butter goes a long way toward achieving a nice caramelization. Once you have the desired searing color take them out of the skillet and set them aside. Add the mushrooms and the onions to the skillet and cook over medium heat for about 10 minutes or till soft. Add the garlic and the tomato paste and cook for another minute or so. As I mentioned in the video, I rarely have tomato paste on hand, so I used tomato pesto instead. While that cooks, dissolve a tablespoon of cornstarch in a bit of water and set it aside. Once the mushroom, onion, garlic, and tomato paste are thoroughly combined, add the water-beef broth mixture. Bring the heat to high, stir, and add the cornstarch slurry. Once it comes to a boil, put the patties back in the skillet, lower the heat to medium and cook for 10-minutes. After ten minutes, turn off the heat and let sit cover for another 5 minutes before serving for the gravy to thicken.
