RICE BALL KHEER recipe

Ingredients for RICE BALL KHEER:
• Rice Flour 400 gm
• Grated Coconut 1 big sized
• Jaggery 500 gm
• Dosa Rice 50 gm
• Cashews as needed
• Cardamom 7 to 8
• A Pinch of Salt to enhance the flavor

• First soak Dosa Rice for half an hour

Method for preparing RICE FLOUR DOUGH:
• In a large bowl, add rice flour, salt and mix well.
• Use lukewarm water to knead the dough.
• Knead it very well to form a soft dough.
• For making rice balls, pinch out a small portion of dough and roll into small balls.

Method for extracting SWEET COCONUT MILK:
• Transfer grated coconut, soaked dosa rice, cardamom to a mixer grinder.
• Add about 1/2 - 3/4th cup of water and pulse the mixer grinder for a few seconds.
• Then add jaggery and again grind for a few seconds.
• Now transfer the ground coconut mixture into a saucepan.
• Then again add little water to the grinder jar and grind for a few seconds and transfer it into the
ground coconut mixture.
• Now stain the ground coconut mixture to extract thick milk. You can either use stainer or muslim cloth to extract milk.
• Transfer the squeezed mixture into a saucepan.
• Now add little water to the squeezed mixture and again repeat the same process to extract thin
milk.
• Sweet Coconut Milk is ready.

Method for preparing RICE BALL KHEER:
• In a cooking vessel, add 500ml water.
• When the water comes to a boil, drop the rice balls and give it a slight stir so that it doesn’t stick
to each other.
• Add a pinch of salt to enhance the flavor.
• Mix well and cook for 10 minutes stirring every now and then.
• After 10 minutes, add the extracted sweet coconut milk and add half cup jaggery. Adjust the
amount of jaggery to your taste.
• Stir it properly till the jaggery dissolves.
• Continue to cook for about 5 to 7 minutes till the mixture slightly thickens.
• Remove 2-3 rice balls and check if it is cooked.
• If it cuts smoothly then rice balls are cooked perfectly.
• Lastly add the roasted cashews and give it one last boil.
• Close the lid and switch off the flame.
• Rice Ball Kheer is ready to serve.
• Serve it hot or chilled.
