CHICKEN BIRYANI RECIPE

METHOD: 

First of all soak 1 kg  long grain basmati rice for an hour

1) Ingredients for Green Masala Paste:
• Ginger-Garlic Paste 2 and 1/2 tsp
• Green Chilly (If spicy 5 or 6 and if normal 10)
• Pudina Leaves 1/2 cup
• Coriander Leaves 1 cup
• Cashew 5-6

Method for preparing Green Masala Paste:
• In a grinder, add all the above mentioned ingredients and grind it to a fine paste.
(Note: Don't add water)

2) Ingredients for Chicken Biryani Masala:
• Chicken 1.5 kg
• Onion (If big 5 or 6 and if small 7 or 8)
• Tomato (If big 5 or 6 and if small 7 or 8)
• Cinnamon 3 sticks
• Clove 12-13
• Cardamom 8-9
• Turmeric Powder 2 tsp
• Prepared Green Masala Paste
• Homemade Garam Masala Powder 3 tsp
• Lemon 1 squeezed
• Coriander Leaves 1 cup 

Method for preparing Chicken Biryani Masala:
• In a non-stick large cooking pot, add oil.
• Add chopped onions and saute till it turns golden brown in color.
• After 2-3 minutes of sauting, add cinnamon, clove and cardamom.
• When the onion turns golden brown in color, add chicken, turmeric powder, salt and mix all well.
• Close the lid and cook on medium flame till the chicken releases water.
• When the chicken releases water, once give a stir.
• Add prepared green masala paste (recipe link given above 👆🏻) and mix well.
• Then spread chopped tomato over it and close the lid and cook on medium flame for 5-6 minutes.
• Then properly mix the tomato with the chicken.
• Now add prepared garam masala powder (recipe link given above👆🏻) and pepper powder if needed.
• Mix well and close the lid and cook on medium flame for 4-5 minutes.
• Then add lemon and water for gravy.
• Now gently give a stir so that the chicken pieces doesn’t fall apart.
• Let it cook on medium flame without lid for 2-3 minutes.
• Lastly add coriander leaves and mix gently.
• Close the lid and cook for another 2-3 minutes.
• Chicken Biryani Masala is ready
• Close the lid and switch off the flame.

3) Ingredients for Half Cooked Basmati Rice:
• Soaked Long Grain Basmati Rice 1 kg
• Cinnamon 3-4
• Cardamom 7-8
• Clove 10-12
• Star Anise 2
• Bay Leaf 3
• Lemon 1
• Salt as needed

Method for preparing Half Cooked Basmati Rice:
• In a big vessel, take water and add cinnamon, cardamom, clove, star anise, bay leaf.
• Then take a lemon and slice cut half and drop it in water.
• Then add salt as needed and stir well.
• Let it come to a boil.
• When it boils, add long grain basmati rice and stir well.
(Please Note: Rice should be half cooked as it will cook further later while steaming (while giving Dum))
• Then remove lemon from the rice and stain the half cooked basmati rice in a stainer.
• Half cooked basmati rice is ready.

4) Ingredients for assembling the Chicken Biryani:
• Half Cooked Basmati Rice
• Coriander Leaves 1and 1/2 cup
• Fried Onion(Birista) 1and 1/2 cup
• Pudina Leaves 1 cup
• Ghee 1 cup
• Yellow/Orange Food Color mixed with water 1/2 cup

Method for assembling the Chicken Biryani:
• In a non-stick pot, first layer with chicken pieces and spread little gravy over it.
• Now spread some coriander leaves and pudina leaves.
• Then spread some fried onion (recipe link given above👆🏻)
• Now layer it with half cooked basmati rice.
• Then spread some fried onion, coriander leaves and pudina leaves as shown in video.
• Then sprinkle little yellow or orange food color mixed with water and then spread little ghee on top.
• Repeat the same step in all the layers.
• After layering, make 3 holes using a spatula or something and add little ghee in all the 3 holes.
• Close the lid.
• In the video you can see, the lid I am using has a hole in it, so i have used a small piece of dough to cover the hole so that no air comes out and it is properly sealed to get a perfect steam (Dum).
• Now switch on the flame and keep it on low.
• Place the assembled chicken biryani on the flame.
(Please Note: It should be kept for Dum(Steam) on low flame only or else the biryani bottom will get burn’t)
• Leave it for 20-25 minutes.
• After 20-25 minutes, open the lid and check if it is perfectly steamed.
• Yummy and Tasty Chicken Biryani is ready to serve.
• Switch off the flame and serve it hot.
