FRIED ONIONS(BIRISTA) recipe

Fried Onions are thin slices deep fried in oil till golden brown and crisp. It is also called Birista. Biryani is incomplete without fried onion as it gives a nice texture, flavor and aroma to your biryani. Not only biryani, you can also use this for making soups, dals, khichdi, pulav and so on. It adds a good flavor to any simple dish. Also if mutton curry, chicken curry or any gravy is more spicy, then take a handful of birista, crush it and add to the curry, masala or gravy to reduce spiciness.
How to store:
Store it in an air tight container and strictly freeze it in a freezer until any use. When stored in a refrigerator or at a room temperature, it goes rancid within 4-5 days reducing the shelf life and taste of it. Storing them in freezer keeps it absolutely good even for a year.

Ingredients for FRIED ONIONS(BIRISTA):
• Onion 10-12 large sized
(You can use onion of any amount, I have used this much)
• Cashews 1/2 cup
• Raisins 1/2 cup
• Oil for frying

Method for preparing FRIED ONIONS(BIRISTA):
• Be sure to slice all the onions of same thickness as this will ensure uniform fried onions.
• Heat oil in a heavy bottom kadai.
• Drop an onion slice and check if it is hot.
• Once the oil is hot, drop the onion slices.
(Please Note: Never drop the onion in less hot oil as it will soak oil and will not become crispy later)
• Fry the onion slices on high heat for 9-10 minutes as frying on high heat helps to get rid of moisture in onion slices. Then adjust the flame to low and fry till onion slices are light brown in colour.
(Please Note: Fry them on low heat, do not be in hurry as perfect crispy fried onions take time and patience. If you fry on high heat, then they will get brown quickly without getting crispy and may also get burnt)
• Keep stirring the onions very frequently.
• Once the onions turn light brown in colour, remove them on a plate with a paper towel placed on it so that it soaks up extra oil and moisture.
(Please Note: Strictly remove the onion slices once light brown, as it will gain a slightly more brown colour after taking out from the oil. If you fry till dark brown, then once you remove it from oil, it will get burnt in a wink)
• Properly spread the fried onions to get crispy fried onion.
• Now in the same oil, fry cashews and raisins on medium flame.
• When the raisins gets fluffy and floats on top, transfer them on the fried onions.
• When the cashews turn light brown, like raisins, transfer this also on the fried onions and now spread the fried cashews and raisins.
• Before storing them, let it cool down fully so that it becomes nice crispy.
• Crispy Fried Onion(Birista) is ready.
• Store it in an air tight container and freeze it in a freezer.
