鹹蛋黃肉鬆麵包Salted Egg Yolk Pork Floss Bread//玫瑰花整形手法//鹹蛋黃醬的做法//Celia's kitchen每週更新食譜

1、麵包麵糰材料:

高筋麵粉275克
牛奶90克
砂糖16.5克
雞蛋83克
乾酵母3克
湯種25克
鹽3克
無鹽牛油25克
2、麵包內餡:肉鬆40克、沙拉醬30克、鹹蛋黃醬50克、白芝麻6克,混合均勻。

3、中種:水100克、高筋麵粉25克,攪拌均勻後,小火邊加熱邊攪拌至濃稠。

4、鹹蛋黃醬:烤熟的鹹蛋黃12顆、牛奶40克、糖粉15克、融化的無鹽牛油25克。

4. Salted egg yolk sauce: 12 roasted salted egg yolks, 40 grams of milk, 15 grams of powdered sugar, 25 grams of melted unsalted butter.
