Sheetcake With Pineapple Cream Cheese Icing

This is one of Mom's most popular recipes and after tasting it I see why!
Ingredients for the cake:
4 eggs
2 cups sugar
16 oz heavy whipping cream
2 teaspoons vanilla extract
1 tablespoon softened butter (or 1 teaspoon imitation butter flavor)
3 cups all purpose flour (sifted)
4 teaspoons baking powder
1 teaspoon salt
3/4 cup pineapple juice

Ingredients for the icing:
1 20 oz can crushed pineapple
8 ounces cream cheese, softened
4 tablespoons melted butter
1 pound (yes, pound!) of powdered sugar
1 teaspoon vanilla extract
1/4 cup pineapple juice

Directions:
1. Add eggs and sugar to a bowl and mix on low. Slowly pour in whipping cream while mixing. Then add vanilla extract and butter. Mix for 3-5 minutes.
2. In a separate bowl, add 3 cups sifted flour, baking powder, and salt. Whisk together to aerate.
3. Add flour mix to the eggs/sugar mix about 3/4 cups at a time. You can use a mixer, but I prefer to mix by hand to not over work it. Add and mix, add and mix, until all flour is incorporated and you don't see any large clumps of flour.
4. Pour batter into a greased 11x16" greased cake pan and spread evenly. Bake at 350F for 1 hour or until a toothpick pulls out clean.
5. Pull cake from oven and, while still hot, poke holes all over the top. Then pour 3/4 cup pineapple juice over the top, allowing the juice to go into the holes.
6. Spread crushed pineapple over the top.
7. For the icing: Add cream cheese and 4 tablespoons of butter to a bowl and mix on low speed. Add vanilla extract and powdered sugar. Add 1/4 cup pineapple juice. Mix until it forms a thick icing. It should slowly pour.
8. Add icing to the cake and spread evenly. Let cool for 1 hour before cutting and serving.
