Steak Frites with Creamy Peppercorn Sauce

Inspired by the French cooking we saw on the series "Julia", the Ravishing Mrs. Ritter requested Steak Frites with a Creamy Peppercorn Sauce. "Your wish is my command, my Queen!"
Ingredients for the Sauce:
1/4 cup Cognac
1/2 cup beef broth
1/3 cup heavy whipping cream
1 TBS cracked peppercorns
Salt to taste (I didn't need any)

Directions:
1. Sear your steaks in a large pan with a tablespoon or so of olive oil and a tablespoon of clarified butter (also known as Ghee). You're looking for the "brown bits" at the bottom of the pan.
2. Over medium heat, add the Cognac and use a spatula to stir around and scrape up the brown bits. Stir around until the steam stops rising (that's all the alcohol cooking off).
3. Add the beef broth. Feel free to add a bit more....that means more sauce! Stir until mixed. Add your peppercorns and heavy whipping cream. Continue stirring.
4. Stir for about 5 minutes over medium heat. You should be able to see the bottom of the pan as you draw the spatula across the pan. That's the thickness of the sauce I'm looking for.
5. Pour sauce over thin-sliced steak (and over the fries if you have enough).
